Whey protein is a by-product resulting from the processing of cheese. It makes up about 20% of the protein contained in cow’s milk, with the other 80% being casein. It is the water-soluble part of milk. During the industrial production of cheese and curd, the milk goes through processing processes, before of course the rennet is added to it. The addition of the rennet helps to coagulate the milk and separate it into curd (which will later become cheese) and whey.
