Curry powder is a mixture of spices with a very different composition, based on the cuisine of South Asia. Curry powder and the modern English use of the word “curry” is a Western invention and does not reflect any special South Asian food, although a similar blend of spices used in North South Asia is called garam masala. The word “curry” comes from the Tamil word kari which means “sauce, delicious for rice. However, the use of like-curry mixtures was widespread in South Asia long before the arrival of Europeans in India. In fact, almost 4,000 years ago spice blends with ginger, garlic, and yellow root as the main ingredients were used in the Indus Valley culture. Chili pepper, a widespread ingredient in curry today, arrived in 16th-century South America from the Americas via the Colombian Exchange.
