It is consumed as a substitute for rice, plain, in salads and soups. Antonopoulos Farm produces 4 types of semolina (Zea semolina, Ptisani semolina, Tutankhamen semolina and wheat semolina). Zeas oatmeal, Tutankhamen oatmeal and wheat oatmeal come from three different varieties of durum wheat while ptisani oatmeal comes from barley seed. All of the farm’s groats come from ancient seed varieties that are saved and organically grown on the farm. All our cereals are wholemeal. The cutting of the seeds is very careful and is done with high-tech machinery in order to keep the final product unchanged and to ensure its high quality. Additionally, while conventional commercial oatmeal is usually pre-cooked, losing many of its nutrients after being re-boiled for consumption (as if double-boiled), farm-raised oatmeal is not pre-cooked. In this way, the nutrients, vitamins, antioxidants and fiber are preserved unchanged.
