Cinnamon, cinnamon or cinnamon, is a spice found inside the bark of several trees of the genus Cinnamomum (Cinnamomum) that is used in both cooking and confectionery. While genuine cinnamomum (Cinnamomum verum) is sometimes considered the “true cinnamon”, most cinnamon in international trade comes from related species, also referred to as “cassia”, thus distinguishing it from “true cinnamon”.

In Cyprus it is called: kapamas and / or kapamas varosiotikos.

Cinnamon is the name for perhaps a dozen species of trees and spices produced from some of them. All are members of the genus Cinnamomum of the laurel family (Lauraceae). Only a few of them are grown commercially as a spice.

The taste of cinnamon is due to an aromatic essential oil that is from 0.5 to 1% of its composition. The essential oil is prepared by roughly beating the bark, soaking it in seawater and then distilling it whole, quickly. It has a golden yellow color, with the characteristic smell of cinnamon and a very warm aromatic taste. The spicy taste and aroma are derived from cinnamic aldehyde or cinnamaldehyde (about 90% of the essential oil from the bark) and in reaction with oxygen as it matures, darkens in color and forms resins. Other chemical constituents of the essential oil include ethyl cinnamate, eugenol (found mainly in leaves), beta-caryophyllene, linalool and methyl chavicol.
