After harvesting, the fruits are opened and the seeds are removed. They are then dried, cleaned and lightly roasted, crushed and cleaned again. The crushed grains are alkalized by the addition of potassium, then roasted, cooled and ground. The result is cocoa mass. The cocoa mass will be pressed until the fat content reaches the desired levels. Apart from the separated cocoa butter remains the solid form that is ground and gives us the wonderful cocoa powder. It is drunk as a drink straight or with hot or cold milk. It is ideal for confectionery.
