The common name salepi refers to the powder it receives from the dry tubers of the Orchid family. As a plant it is herbaceous and perennial, green at the base and purple at the top. In the old days it was attributed aphrodisiac and healing properties and there are references of salepi in texts of Hippocrates, Asclepius, Theophrastus and Galen. Salepi is used mainly in the East but also in Greece as a winter warming, emollient and nourishing morning drink. The tubers are first moistened with scalding water to remove the essential oil they contain. They are then dried and ground. A decoction of the powder is prepared which is sweetened with sugar or honey. Salepi is used to make ice cream and dudurma. Preparation: In a kettle, put 2 cups of water or milk and 12 g of salepi (1 sachet). Stir until well dissolved (so that it does not clot). Place the kettle on the fire and let it boil, stirring constantly. Once it swells, remove from the heat, stirring. Put the kettle back on the fire and repeat the process. Served hot.
