It is an ancient cereal that should not be confused with common wheat. It is one of the oldest grains mentioned in the Bible and dates back to around 10,000 years. It was cultivated for the first time in Persia and was a staple food for humans and animals, while it soon overwhelmed Europe and the rest of the world.
Unlike common wheat that is easily hulled, Dinkel’s grains require special processing to be hulled. Their impenetrable outer skin allows the development of a thinner, delicate, water-soluble core in which vitamins and trace elements are developed and preserved, making this wheat efficient in cultivation but also very nutritious for health.
The hard shell of the grain protects the wheat from environmental pollutants and insects, while it acts as a protective barrier that helps preserve the nutrients in its core. It is a direct source of vegetable fiber and contains significant amounts of water-soluble vitamins.
Its protein content is from 10 to 25% higher than the rest of the wheat varieties. This content varies depending on the crop, the environmental conditions and the season of its harvest. Contains significant amounts of iron, magnesium, zinc as well as beneficial fatty acids
