These are native mushrooms of the genus Morchella sp. (Morchella elata, Morchella deliciosa, Morchella vulgaris, Morchella escullenta). Morelles appear in Greek forests from March to May in small groups or alone on the ground in coniferous and deciduous forests. In recent years, successful cultivation efforts have been launched in various countries with excellent results, but without significantly reducing the price of the product. They are mushrooms known worldwide in the world of haute cuisine but also in Greece as they are highly valued in many areas. They are also known as kourkourikia, kourmekia, bunnies, matsikaria etc.

The flesh is white, elastic at first, brittle later with a pleasant odor. If you look closely at the mushroom you will find that it is hollow inside, which makes it ideal for stuffing. You can choose the largest mushrooms and after soaking them in brandy, fill them with minced meat or cream cheese and fresh spices. Bake in the oven or sauté in fresh butter and extinguish with the brandy you soaked.

Nutritional Value: source of protein, high in fiber.
