The juice is heated to evaporate the water and crystallize, then by centrifugation impurities are removed and the sugar is dried. Its name comes from the colony of Demerara in Guyana, where it was originally brewed. It is not suitable for cakes, but is used to sweeten breakfast cereals, grapefruit and tea or coffee.
