A Greek version of the Semillon variety, from the most burgundy region of Greece, Drama, from the hands of the experienced and French-trained vigneron and oenologist Baki Tsalkos. Few days of contact with the skin and lack of handling give the opportunity for comparisons of terroir expression of this rare monovarietal dry vinification of the variety.

Vinification: 4.5 days on the skins followed by a first soft pressing and matured in stainless steel for 4 months on its fine batonage lees before bottling with little sulphite
